Zucchini Bread (from Claudia Teeples)

Cream together:
3 eggs
1 c. oil
2 c. sugar
3 T. vanilla
Add:
3 c. flour
1 t. baking soda
1 t. salt
1/2 t. baking powder
3 t. cinnamon
 Stir in:
2 c. grated zucchini
whatever extras you want (ie: nuts, etc)

Bake in 2 greased & floured breadpans at 350 degrees for 1 hour.
